Think Pizza owners Bruce and Tracy Kelsey first realised the power of wood fired pizza after they installed a wood fired pizza oven in the backyard of their Perth home. The combination of woodfire aromas, the opportunity to allow guests to help make their own pizzas, being able to assemble around and see the pizza cooking, the delicious savoury and sometimes sweet results… It was all such a successful way to host guests. The Quest for Pizza Perfection While it was an incredibly empowering experience for the Kelsy’s to host wildly successful backyard events, it was Bruce who wanted more. He wanted to produce a pizza that would rival Perth’s top restaurants. He wanted perfection. Relentlessly he sought the ultimate mixture of dough, sauce and toppings. As he delved deeper into the world of pizza perfection he came across a combination of flavours that was too good to keep to himself. The Beginning of Think Pizza In 2017 Bruce set up a custom mobile woodfired pizza unit complete with woodfire pizza oven, dough storage, topping storage, coffee machine, drinks storage and more. His mission was to bring in his amazing woodfire pizzas to parties and events across Perth. By late 2017 Think Pizza was fully in motion. At each celebration they are overloaded with positive reviews from delighted customers and event attendees. Where will Think Pizza happen in the future? Not even the Kelsey’s know. But one thing is definite. If you are contemplating mobile woodfire pizza for your Perth event, you just can’t go past Think Pizza for an incredible woodfire pizza service. Think Pizza Shop in Port Kennedy. You’d be forgiven for thinking the story finished with the wildly successful mobile pizza service. But there’s more. In early 2019 the Kelsey’s launched their first Think Pizza shop in Port Kennedy. Having a fixed address means people now know where they can come and find epic woodfired pizzas anytime. No longer are they constrained to mobile events, flittering about the countryside in summer feeding the festive masses. They now have a fixed address. So that all of Port Kennedy and the rest of Perth know exactly where they can get amazing Woodfired Pizzas at anytime (within opening hours of course). It’s just the beginning. New Oven, New Location. Think Pizza Port Kennedy was gathering momentum. There was a strong local tribe of devotees who took to the delicious offerings. Such were the demands of a physical shop that Bruce could no longer run the mobile catering. But Bruce had a greater problem… While the Wood fired oven created amazing pizzas, it was challenging to deliver pizzas in a timely manner. The process of cooking was lengthy and inconsistent. So Bruce went in search of the ultimate. Using some Instagram stalking skills (you can’t teach that stuff), he leant that 8 out of the top 10 New York Pizzerias used the exact same brand of stone based oven. He made some enquiries… yada yada yada… and boom! got the same oven shipped right here to little ol’ Perth. The Pizzas consistently came out delicious, crispy and better than before. Bruce knew he was onto a winner. Time to grow. He got a second oven shipped out for a new Lakelands store. So far it’s been a raging accomplishment – feeding the appetite of the locals for premium local pizza. Where to next? Well with a winning method and a growing hunger from Perth people for Think Pizza, the sky is the limit. Stay tuned.
